zucchini muffins

(recipe adapted from “Mom’s Zucchini Bread” on allrecipes.com)

1 cup flour
1/4 tsp salt
1/2 tsp baking powder
1 tsp ground cinnamon
1/3 cup oil
3/4 cup sugar
1 egg
1/8 cup raisins
1/4 cup chopped walnuts
1 cup finely grated zucchini

Preheat oven to 180C. Oil and flour muffin pan. Makes 8 muffins.

Spinach soup (adapted from Creamy Spinach Soup recipe on allrecipes.com)

400grams (~1lb) chopped frozen spinach
2 cups chicken broth
1/2 onion, minced
1/2 tsp garlic powder

Boil everything together until spinach is tender
