Purslane Mashed Potatoes

Portions: 3-4
Ingredients:

1 lb (500 g) potatoes
1 cup purslane leaves (regla), washed and finely chopped
1 stalk celery, finely diced
1 spring onion, finely chopped
2 tblsp mayonnaise
2 tblsp yoghurt
1/4 tsp salt
